Blueberry Chia Chocolate Cups


Lately I've been loving the kind of treats that you can make out of coconut oil and that are sugar free. I keep all those kind of treats in the freezer. So right now, all my in between meal-snacks pretty much come out of the freezer! You can make things so so healthy and still delicious, I am obsessed right now with making treats and keeping them in the freezer. 


These are a step up from what I normally make. They are definitely more intense, but so so worth it! Refined sugar free, vegan and an added bonus ingredient...chia. Made with a creamy cashew, chocolate butter with a blueberry chia jam covered in a rich dark chocolate.....aaaaaah healthy living. Haha. I've been trying to eat more chia seeds lately and these are actually a super good way to get them down. Haha

Blueberry Chia Chocolate Cups

Blueberry Chia Jam:

1/2 cup blueberries

1 tsp. agave nectar

pinch of salt

1 tab. chia seeds

Cashew Chocolate Butter:

3/4 cup cashews

1 tab, cacao

3 tab. coconut oil, melted

1/4 tsp. cinnamon

2 tsp. agave nectar

pinch of salt

Dark Chocolate:

4 oz. unsweetened chocolate

1 tsp. coconut oil




Chia Jam: In a food processor, blend all but chia seeds until smooth. Stir in chia seeds, refrigerate until needed.

Cashew Chocolate Butter: In a food processor, blend cashews until you have a smooth, creamy cashew butter. Add rest of ingredients and blend until smooth and creamy. Set aside until needed.

Dark Chocolate: In a double boiler, melt unsweetened chocolate until melted. Remove from heat and stir in coconut oil. 

Assemble: Line a mini muffin pan with liners. Spoon some chocolate in the liners and spread a thin layer around the sides and the bottom. Freeze. Fill half way with cashew butter and freeze again. Fill the remaining way with blueberry jam, freeze again. Once everything seems very hard and completely frozen, take remaining melted chocolate and spread a smooth layer to top the cup off, freeze until hard. Store in the freezer or fridge.
