Soft wraps aren't that rare to find a good recipe for. But these are gluten free and vegan and that IS hard to find a recipe for. I tried to make a few gluten free wraps using cassava flour or almond flour and they always turn out stiff and unwrapable. You could spread some jam and they might even taste okay. But as far as soft and using them for tacos or something, I never had any luck.
These are so so soft and totally great for tacos. These are especially great for meal prep: just make them, and fill them and freeze them in a pan. Then when you need a fast dinner, just reheat. They make great tacos, quesadillas, cinnamon and sugar wraps, pretty much just sub for any other gluten tortilla. Even the non-gluten free should think these are good!
I am one of those people who get intimidated when I see a recipe with 20 ingredients and 20 steps! But these are only made with 4 ingredients (one of them being water haha), and super easy and fast to make.
Soft Wrap Recipe: (gluten free and vegan)
1/3 cup oat flour
dash of salt and baking powder
1/4 cup water
Instructions:
Heat a pan over medium heat and spray. Mix up batter and let sit for about one minute, it will thicken up. Spread batter with the back of a spoon on heated pan. Once spread out, cook for one minute, flip and cook for two more minutes. Remove from pan and enjoy!
We used to make normal white flour wraps and stuff them with honey mustard or barbecue chicken, or eggs and cheese, chicken pot pie tortillas. If you make anything with normal tortillas, just sub for these. They work just as good!
